The taste of some herbs/spices used in food preparation (aniseed, basil, peppercress, vinegar, spice mixes,
ginger, garlic, onion, nutmeg, thyme, marjoram, black pepper, etc.) changes and after longer storage their
taste intensifi es. For this reason only put a small amount of spices into frozen food and only add the required
amount of spices after the food has defrosted.
Food storage time depends on the type of fat used. Suitable fats include margarine, veal fat, olive oil or butter,
whereas peanut oil or pork lard are unsuitable.
Food that is in liquid form should be frozen in plastic containers and other foods should be stored in plastic
bags or food-grade foil.
